It looks like there is language support built in to the Category tool, but the language drop down isn't showing language options other than English. The Inventory Items tool, however, shows that language options include English and Spanish.
Each Item has Language support so that the product name and description can be in any language but the Categories does not have this same support. The Category page shows a language drop down that does not work because it is not supported. It is something we should add.

FYI after consulting with a few developers, this has been added as a bug to be worked on after confirming that is was working previously but no longer does.

Yes the Inventory Categories in disco.
