When a product is out of stock, I would like people to still be able to see the product without being able to buy it.

This is specifically within the retail store. We'd like to have the thumbnail image dimmed, and ordering disabled, if a product is out of stock. Our only option right now is to entirely remove the product listing from the category display, which makes affiliates and customers think we don't carry a product any longer.
